Manna Café Barista Competes in Great Lakes
Regional Barista Competition
From February 20-22, Manna Café and Bakery Barista
Trevor Gruehn competed in the Great Lakes Regional Barista Competition.
Against some very tough competition, Trevor represented the café
very well, just falling shy of making the 2nd round. His shots of Single
Origin Natural Process Ethiopian Adado Espresso received rave reviews
from the judges and his Cappuccinos, utilizing single origin Kenya AA
Nyeri Tatu Espresso, also did very well. We look forward to the next
competition and hope we'll have a winning barista representing Madison
very soon. Stop into the

Roasters has worked hand in hand with our cafés to provide

Coffee in Lannon, WI and Birdy's Café (formerly
Highland
Park Pies and Café) in Milwaukee, WI have each hosted several
coffee and food pairings. By utilizing the expertise of Head Chef Scott
Mattfeld (Quarry Coffee) and Sarah Buzzell (Owner and culinary adventurer
at Highland Park); we've come up with unique menus that deliberately
choose coffees that will compliment certain foods. From risotto with
medium roasted Fair Trade and Organic Ethiopian Sidamo to quiches with
medium roasted Fair Trade and Organic Guatemala we've tried a little
bit of everything. While enjoying fantastic coffee and food, we also
hold lively discussions on coffee history, processing and the future

Milwaukee Food Blog about Coffee
In mid-March, Alex Butler sat down with Stacey Abillie
of Milwaukee. Stacey owns a flower shop and is a regular patron at Birdy's
Café (formerly Highland Park Pies and Café). He writes
a blog about terrific foods and items of interest for those of us who
can't get enough quality, local food. Stacey approached me after a recent
food/coffee pairing event at Birdy's and said he really wanted to write
an article about specialty coffee. I was happy to oblige and so we sat
down for two hours and talked about all things coffee. I think we covered
many important points relating to coffee and I think we both realized,
once started, you can easily talk about coffee for as long as your local
café owner will let you. The result of our talk was a great article
that really captures the essence of what makes specialty coffee so good.

John Harbors Crew Visits Roasteria
In early March we were honored to have Jeremy, Anjuli
and Lindsay from John
Harbor's
Main Street Café in Menomonee Falls, WI. come and visit our
roasteria. We wanted to make sure we were all on the same page about
proper brewing and extracting methods and also have those guys meet
our family here in Madison. It was a great morning spent discussing
the finer points of light vs. dark roasted coffee and all the unique
challenges facing the Specialty Coffee Industry. I think we all walked
away adequately caffeinated and with a finer appreciation of our respective
visions for coffee. It was a great opportunity to just hang out and
have our friends from Menomonee Falls see our operation, meet Mike and
